Garlic coconut chutney

Garlic Coconut Chutney is a coconut based chutney regularly made by my mom at home. Everybody in my family loves it and now after marriage, its my husbands favorite chutney too! We like it garlicky with a little kick of spice in a coarse texture of coconut. Delicious!

Serves: 4
Cooking time: 10 mins

13 tbsp coconut, freshly grated
5 cloves garlic (lasun), large size
1 tsp red chili powder, or adjust as per spice tolerance
1½ tsp salt, or adjust as per taste
2 tsp sugar
1 inch piece tamarind (imli / chincha)
spring onions, for garnish (optional)

1.  Take all ingredients together in a mixer-grinder. Add to it a small amount of warm water and grind everything together.
2.  Process to a fine paste, adding enough water to achieve a semi-thick consistency of chutney.

Garnish with spring onions and serve with Idli, Dosas (Neer Dosa),  Vadas (Medu vada or Batata Vada).

Spoonful O’tips

Try to to use fresh coconut since its the key to better taste.
