American Chop Suey

Ingredients

Crispy Fried Noodles
150 gms noodles (Hakka or Egg Noodles), (makes approximately 2 cups boiled noodles)
4 tsp oil, for boiling and tossing
½ tsp salt
3 tbsp cornflour
Oil, for frying

Chop suey
2 tbsp + 4 tsp oil
2 tbsp cornflour
½ cup green bell pepper (capsicum), sliced
½ cup carrots, julienned
½ cup cabbage, shredded
½ cup chicken, boiled and cut in 1 inch strips
150 gms noodles (Hakka or Egg Noodles), (makes approximately 2 cups boiled noodles)
¾ cup tomato ketchup
½ tbsp red chili sauce
¾ tbsp schezwan sauce
1 tbsp vinegar
1 tbsp sugar
1 tsp salt, or as per taste

1 egg, sunny side up (optional)
Scallions (spring onions), finely chopped

Preparation

How to make Crispy Fried Noodles

Chop suey
1.  Take cornflour in a bowl, add 1½ cup of water and mix well. Keep aside.
2.   Boil 5 cups of water in a large pot on medium heat. Add noodles, 2 tsp oil and ½ tsp salt to it. Turn occasionally in between and boil until the noodles are completely cooked (approximately 4-5 mins). Turn off heat.
3. Transfer the noodles to a colander and drain water. Pour cold water over the boiled noodles. Then transfer the noodles into a deep plate and add 2 tsp oil to it. Toss the noodles together. Keep aside.
4. Chop all veggies and keep it ready. Boil chicken and cut it into 1 inch strips. Keep aside.
5. Heat oil in a pan on medium heat, add onions and saute for 1-2 mins.
6.  Add capsicum, cabbage, carrots and saute for 3 mins.
7.  Add boiled chicken strips and boiled noodles to the pan. Saute on medium heat for 1 min.
8.  Add tomato ketchup, schezwan sauce and red chili sauce, mix well and cook for 1 min.
9. Add the cornflour mixture and mix everything together.
10.  Then add vinegar, salt, sugar and cook further for 4-5 mins until the sauce thickens. Turn off heat.

Serve chop suey on a plate in the center and place crispy noodles over it. Place the fried omelette over the crispy noodles and garnish with spring onions.

spoonful O’ tips

1.  The same recipe can be made by removing or replacing chicken with paneer to make a Veg Triple American Chop Suey.
2.  While cooking, noodles must be completely submerged in boiling water so that they cook evenly.
3.  The time required to cook different types of noodles may vary. So be careful, overcooking noodles might turn them mushy. Noodles to be fried must be 80% cooked and noodles for the chop suey must be cooked completely.
4.  Pouring cold water over the boiled noodles stops them from cooking further.
5.  Tossing cooked noodles in oil stops noodles from sticking together.
6.  All-purpose flour (maida) can be used as a substitute for cornflour in the gravy.
